Harvest time is baking time!

cookingHarvest time is an event that we really don’t celebrate in Australia – well, maybe in the rural areas they might but as I grew up on the northern beaches of Sydney anything to do with the countryside is new to me. Living in Northern Ireland means the countryside plays a big part in life here as it is basically a rural environment, even standing in the centre of Belfast you only have to look up and around to see the green hills and fields above and beyond the city. I love it.

It’s coming on to harvest time of year here now and so our children’s school is sending home notes regarding the annual Harvest Craft Fair and on Friday I will have a box brought home to fill with a cake or two. I like to add a little touch of my homeland on these occasions so I will be baking up a batch of good old lamingtons which are a staple in school fundraising in Australia. The annual lamington drive saw all the Mums ordering a dozen or so lamingtons from the school and we kids would take them home when they were delivered. Those lamington drives funded alot of extras like sports equipment and class excursions when I went to school and I hope the tradition has not died in Australia.
