So what did Santa bring you…?

Every year we make it a rule to only get the kids a few quality gifts because, lets face it, when they are little they tend to concentrate on just one or two particular things once they’ve opened their mountain of presents.

And every year we broke that rule – until this year…

We stuck to our guns and each child received three nice, special gifts each and it has been a winner. My fifteen year old has been hinting about MP3 players all year but when I saw an MP4 on sale for a rather good price I went one better and got him that.

Books always are a popular present in our house so they are one thing we always do splash out on apart from the usual gifts – in my opinion books are something you can never have too many of.

What to do with that leftover turkey…

The thing about turkey meat, especially after it’s been in the fridge, is that it dries out. The best way to use it up is to use in recipes that are sauce-based, such as curries. You can make a very quick and easy curry using a nice ‘brand’ jar of curry sauce or paste. The idea is for everything to be quick and easy – agreed?

*Just slice up an onion or two and sweat it in the pan. Toss in your jar of sauce/paste, stir then add a can of coconut milk, stir and simmer for two minutes. Then add your shredded turkey meat, combine and heat well though. I always like some fruit in a curry and add a tin of sliced mango towards the end – if you dont have sliced mango’s then peeled and sliced apples do just as nicely. Boil up your rice and voila!

* Do you have some pasta sauce in the pantry…? right. Tear up your turkey meat and put aside. Boil up some pasta tubes or shells and drain when done. Put aside. Into a big saucepan pour a tin of tomatoes, a teasp of paprika (and a pinch of chilli powder if you like)  and then your pasta sauce (not a meatbased one – a tomato and basil one is great). Stir over a gentle heat until it bubbles and thickens a little - add a little red wine now if you like. Tip in your pasta and stir through. Add your turkey meat and a handful of olives (black or kalamata work best).  Gently heat though until nice and hot, toss through some cubes of feta cheese then garnish with parsley, basil or coriander and enjoy! Serves four – just up the ante on the tinned tomatoes for bigger portions.

* Turkey makes a great stir-fry. Shred the meat and put aside. Thinly slice up some carrots, zucchini, an onion, a red pepper (or green, it’s up to you – both if you prefer some colour!). Toss them through some hot oil and stir fry for a couple of minutes. Add your turkey and stir through then splash in some soya sauce, juice of half a lime or lemon and a tablespoon of honey. Combine the lot and toss through. I prefer the egg noodles with stir-fry ( I just soak them in boiled water while I am cooking until they are soft) – or rice of course.

And for the quickest ‘sweet n sour’ ever…

* Dice and fry an onion and then stir in your shredded turkey meat and heat through. Toss in a jar of sweet and sour cooking sauce and heat until lightly bubbling. I add a splash of coconut milk for a touch of luxury. Serve with rice.

It’s snowing!

Many of you would have seen snow too many times to mention – but when an Australian sees it they get kinda excited…unless they live in Thredbo of course.
